PFC Honey Vanilla Loaf Cake

A simple, comforting honey vanilla loaf made with ProteinFlour Co. blend. This loaf is like a sweet bread or snack cake, perfect withtea or coffee. Honey adds moisture and gentle sweetness, giving the loaf a soft crumb and beautiful golden color.

Equipment

  • 1 Loaf Pan
  • 1 Blender or Food processor

Ingredients
  

  • 1 cup Protein Flour Co. blend
  • 1/2 cup yogurt plain or vanilla
  • 2 large eggs
  • 1/3 cup sugar you can reduce slightly if you prefer it less sweet
  • 1/4 cup honey
  • 1/3 cup oil
  • 1 tablespoon baking powder
  • 1 1/2 teaspoons vanilla extract

Instructions
 

  • Preheat oven to 350°F. Grease and line a loaf pan with parchment paper.
  • In a food processor or blender, add the yogurt, eggs, sugar, honey, oil, vanilla, baking powder, and Protein Flour Co. blend.
  • Blend until the batter is smooth and well combined. It will be slightly thicker than some of the fruit loaves but still pourable.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake at 350°F for about 45–55 minutes, or until a toothpick inserted in the center comes out clean or with moist crumbs.
  • Cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Because honey adds extra moisture and browning, keep an eye on the loaf toward the end of the bake. If the top is browning too quickly, you can tent it loosely with foil for the last 10–15 minutes.
