½cupapplesaucesweetened or unsweetened—adjust to preference
2tablespoonssugaror preferred sweetener
1teaspoonbaking powder
1teaspooncinnamon

1can of Apple pie fillingsweetened or unsweetened—adjust flavor with cinnamon or sugar if desired
Instructions
Preheat oven to 375°F (190°C) if baking. Prepare a baking sheet lined with parchment paper.
In a bowl, mix the protein flour, applesauce, sugar, baking powder, cinnamon, and salt until a soft dough forms. Let it rest for a few minutes.
Divide the dough into 4 equal portions. If you have a tortilla press, line it with folded parchment paper and press each dough ball flat. (Alternatively, roll out each portion between two pieces of parchment paper.)
Add a spoonful of apple pie filling to one side of the flattened dough. Use the parchment paper to fold the dough over the filling, forming a half-moon shape.
Seal the edges with a fork to prevent leaking. If baking, cut 3 small slits across the top for steam to escape.
Transfer each pocket to the parchment-lined baking sheet.
Bake for about 18 minutes, or until golden brown. (If frying, do NOT cut slits—simply fry at 350°F for about 2½–3 minutes per side, until golden.)
Sprinkle lightly with cinnamon and sugar after baking or frying. Optionally drizzle with icing or glaze for extra sweetness.
