Ingredients
  

  • 1 cup Protein Flour Co. flour
  • 1 tsp baking powder
  • 1/2 tsp garlic salt
  • 1 tbsp olive or avocado oil
  • 1/2 cup warm water
  • 2 tbsp BBQ sauce 1 tbsp per flatbread
  • 8 oz Barbecue pulled chicken Recommendation: (1/2 package Jack Daniel's pulled chicken)
  • 2/3 cup shredded mozzarella cheese 1/3 cup per flatbread
  • 2 tbsp Red onion 1 tbsp per flatbread
  • 1-2 tbsp Cilantro 1/2-1 tablespoon per flatbread

Instructions
 

  • Mix flour, baking powder, garlic salt, oil, and water until a dough forms.
  • Let dough rest for 10 minutes to hydrate.
  • Divide dough into two equal portions and shape into flatbreads about 1/2 inch thick.
  • Heat a lightly buttered skillet over medium heat.
  • Cook flatbreads on both sides until golden brown.
  • Top each flatbread with BBQ sauce, BBQ chicken, red onion, and mozzarella.
  • Bake at 350°F for 5 minutes or until cheese is melted.
  • Top with Cilantro and serve

Notes

Yields 2 hearty flatbreads. Add herbs or red pepper flakes if desired.
